Simply the Best Vegan Vanilla Cupcakes

When you think of vegan cupcakes most people think chocolate. This is because most vanilla cupcakes just aren’t quite right when you change or substitute an ingredient. It’s either too dry, flavorless, or grainy. In other words, it’s not great, so it’s not worth eating. Well that is a thing of the past with these ultimate top eight free vegan vanilla cupcakes! They not only are full of flavor but have a super light texture.

I started with a great dairy free recipe by Make It Dairy Free and did a few tweaks to make a true winner.

Line your muffin tins with paper. You can do regular or mini cupcakes.

First, the margarine should be super soft or semi-melted. If it is too cold it will never combine into the batter making for a very greasy cupcake. Whip the margarine for a minute or two in your mixer.

Then add the room temperature non-dairy milk. My favorite is Vanilla Flax Milk. If it is too cold it will again make a very greasy cupcake. At the same time add the apple cider vinegar. Mix on high for a minute or two until everything is well combined and let sit for five to ten minutes.

While that is sitting sift the dry ingredients except the white sugar into a medium bowl.

Add the sugar into the mixer and blend well.

Then pour the dry ingredients into the mixer slowly ensuring everything is incorporated. 

Last but not least add the vanilla extract. Mix on high for two minutes until you have a nice smooth batter. If the batter is lumpy before adding the last ingredient change the beater attachment to the wire whip.

Now use a cookie scoop and fill the muffin tins about two thirds full.

Bake between fifteen to twenty minutes depending on the size of your cupcakes. Use a toothpick to check if they are baked fully. If you insert it in the middle of a cupcake and it comes out clean or a few crumbs it is baked.

Take out the cupcakes from the oven and let cool for no more than five minutes in the tins. Then transfer them to a cooling rack to cool completely.

You can enjoy them as is or let cool for at least an hour before decorating with your favorite frosting.
