I meant to do that...

It’s that time of year where I crave cut out cookies and what better cookies are there than gingerbread cookies? Now baking top 8 always means fudging some ingredients or just a plain swap. I found a recipe for gluten free gingerbread men and thought I’d give it a try. Recipe is by Gluten Free on a Shoestring: Gingerbread Men.

Well the dough with my egg substitution looked exactly how they said it should be and my was it sticky. Like super sticky!

I just wanted to forget baking and eat the dough right then and there.

 

 

 

 

My first attempt at cutting out the dough into shapes was an epic fail but I didn’t give up.

I scooped the dough off the parchment paper and generously sprinkled the paper with cornstarch. This helped quite a bit but the cookies were still very finicky and not easy to transfer to the cookie sheets. But I was determined because the dough smelled and tasted so good (the great thing about baking Top 8 is you can taste the dough at anytime during the mixing process and gauge if anything needs to be added or not)!


By the fourth cookie sheet of cutouts I had a semblance of a system that worked for the most part. I will give this another try and tweak the recipe even more to make it a more workable Top 8 cookie but the taste was so good and both my children asked for another!
