Super Simple Pumpkin Muffins
November is here and it’s officially feeling like pumpkin weather! Yes, I may have taken a little longer to jump on the pumpkin spice bandwagon this year but seriously there were so many fabulous apple desserts I needed to get through first before I could happily move onto the next big flavor.
First on the docket for pumpkin- pumpkin chocolate chip muffins! Yum, yum, YUM is all I can say with these wonderfully easy one bowl recipe. From start to finish this super tasty treat is less than thirty minutes. And it makes a ton so you can share, but only if you want to.
First you line your muffin tins with paper.
Then you add all the dry ingredients into a large bowl giving it a good mix.
Then add the wet ingredients and blend together.
My favorite part- using a large spoon or spatula fold in the chocolate chips into the batter.
Scoop the batter into the muffin tins using a cookie scoop or spoon.
Bake and enjoy the smells of pumpkin spice fill your house.
Let cool and enjoy!
These can be stored in an airtight container for up to five days or even freeze them for up to six months!
